Tator Tot Cassarole

Here's another great find from Kathie Cooks. I used two small 8x8 disposable foil pans and split it into two-one for now and one for the freezer.

1lb ground beef (ground turkey or chicken would be good too)
1 small onion, chopped
1 can cream of mushroom soup
1/4c. milk
1c sour cream
16oz package of frozen vegetables
3c shredded cheddar cheese
tator tots

Brown the ground beef, drain and add the onion. Saute until onion is translucent. In a small bowl combine the soup, milk and sour cream.

In a 9x13, or two 8x8 pans layer the following:

  • ground beef/onion mixture
  • frozen vegetables
  • sour cream/soup/milk mixture
  • cheddar cheese
  • tator tots
Bake uncovered at 350 for 35-45 minutes until cheese is bubbly and tator tots are brown and crispy. This was a big hit with my youngest-she had two BIG bowls!
